About William

I like to teach for many reasons. I find it one of the most rewarding things on the planet, to be honest. Generally most of my teaching has been in ESL, but I’ll talk a bit on my cooking experience here, because I really honestly did have so much fun with that.

For a summer, I taught some cooking classes to elementary and middle-school kids. So we’re talking kids between the ages of 8–14, depending. I had signed up for this assignment and kinda wasn’t expecting to get interest, but I got a CRAPTON of it, so had to find a curriculum.

If you ever want to teach a cooking class to kids, you absolutely HAVE to get ACF Chef’s ‘That’s Fresh.’ It’s free, and you can get it on a Google search (or at least you could). It’s nut-free, Halal, and Kosher (I think there are a couple references to pork, but these are easily substituted).

So I went ahead and did this, and spent a summer teaching kids how to chop garlic and bell peppers, and stopping them from using the grape tomatoes when they needed the Roma, and so forth. It was very easy. Most kids are quite responsible with knives and fire so long as you supervise them and also give them some room to move. Even the youngest ones would never reach for anything in the stove without a glove. Sometimes one kid would open the stove and then another would reach in with the oven mitts to take out the dish and then the first would close it very quickly. “I don’t want to waste the hot,” one of them told me.

There was absolutely no running. I made that a strict rule, and the other kids would enforce it. If anybody started moving too fast, I didn’t even have to say anything. “Slow down!” another kid would say. “That’s dangerous! Laura said so!”

The kid would. “Sorry,” they’d say to me.

“That’s all right, honey, just remember,” I’d say, and it was literally never a problem.

We made actual dishes, too: spinach pesto, zucchini muffins, asparagus soup, hoppin' John, biscuits, cornbread, jambalaya, cheesecake, garlic-sesame drumsticks, chicken black bean enchiladas, homemade croutons, chili con carne, French onion soup, the works.

And, you know what? The kids LOVED IT. Some things did turn out a bit lumpy, but when we sat down at the end to eat our food, I am 100% serious you had third-graders sucking down salad with croutons like it was the best thing on the planet. Kids slurping up pesto even though they swore up and down they hated spinach.
