About Jay
I'm a professional restaurant owner, chef, and educator for many years! I love to help cooks learn and master the basics and advanced techniques to the ancient art of BBQ and meat smoking.
I've trained hundreds of cooks and chefs in my restaurant kitchens. Over 30 years I've owned and operated 13 separate restaurants. I've concepted, created, operated, and owned these properties. I was an executive chef at a major hotel (250 rooms, 3 restaurants, 10 catering rooms, and 2 lounges). I hired, trained and oversaw the staff of 65.
I was a professional corporate trainer for 10+ years. I have advanced degrees in management, leadership, psychology, and criminal justice.
